Spinach Sauce for Pasta

Ingredients

  • 1 bag ready to eat baby spinach
  • 1 tbsp olive oil
  • handful fresh basil leaves
  • 1 tsp Swiss vegetable bouillon powder
  • handful of grated cheddar cheese or 1 tbsp grated parmesan (optional)

Directions

  • Pierce bag of spinach with a sharp knife and pop in the microwave for 3 minutes (or sweat spinach in a pan with about 1 tsp of water)
  • Put spinach in a container, add the olive oil and basil leaves, puree with a hand blender
  • Dissolve the vegetable bouillon in 2 tbsp of boiling water and add to the spinach mixture
  • Blend until you have a smooth sauce
  • Optional – add cheese and blend

Serve with pasta or noodles

Top tip! Freeze in ice cube trays for handy portion sizes.
