Pod’s Pepper Pasta Sauce


  • 1 tbsp olive oil
  • 1 red onion
  • 1 clove garlic
  • 3 red peppers
  • 1 large tin chopped tomatoes or passatta


  • Preheat oven to 200°C, Gas mark 6
  • Deseed the peppers and slice into quarters
  • Brush peppers with a little oil and bake for 30 minutes, turning after 15 minutes

Time Saver: Slice the peppers thinly and stir fry until soft

  • Roughly chop onion and sauté in 1 tbsp of oil until soft, add roughly chopped garlic and sauté for a further minute
  • Add tomatoes and simmer for 5 minutes
  • Add the roasted peppers and blend, add basil if desired
  • Serve with freshly cooked pasta or free in ice cube trays for future use

NOTE: If you would like to make this sauce using fresh tomatoes. You will need to boil the kettle and then submerse 6 tomatoes in the water for 10 minutes, the skins will split. Remove from the water to cool and the skins will peel off easily
