Lettuce Soup

Serves 2


  • 1 large onion
  • 1 tbsp olive oil
  • 2 large potatoes
  • 3 cloves of garlic
  • half vegetable stock cube or 1 heaped tsp Swiss vegetable bouillon powder
  • 1 large iceberg lettuce or 2 romaine lettuces


  • Saute the onion in the olive oil, once soft add the potatoes, peeled and diced.
  • Stir until the potatoes are shiny with oil and cook on a low heat for 5 minutes (if the potatoes begin to stick add a little more oil)
  • Add the garlic, roughly chopped and cook for a further 2 minutes
  • Add the stock or vegetable bouillon and add enough water to cover the potatoes and bring to the boil
  • Simmer for 15 minutes or until potatoes are tender
  • Add the chopped lettuce and submerse in the water, cover and simmer for about 5 minutes until the lettuce has wilted, allow to cool
  • Once cooled remove a cup full of liquid then blend
  • Season as necessary
