Green Bean, Leek and Potato Soup

Serves 2


  • 1 small onion
  • 1 tbsp olive oil
  • 1 large handful green beans
  • 2 large leeks
  • 2 potatoes (preferably Maris Piper)
  • half vegetable stock cube or 1 tsp Swiss vegetable bouillon powder
  • 50ml milk (optional)


  • Wash the potatoes and, leaving the skins on, chop into pieces the size of your thumb
  • Melt the butter and add the onion and leeks and cook until tender
  • Add the green beans and potatoes and enough water to cover the vegetables
  • Add the stock or vegetable bouillon and bring to the boil
  • Simmer for 15 minutes or until potatoes are tender
  • Blend and add milk or water to achieve the desired consitency
