Carrot and Parsnip Soup

Serves 2

Why not accompany the soup with some delicious Parsnip Chips!


  • 1 tsp olive oil
  • 1 medium white onion, chopped
  • 3 large carrots, peeled and chopped
  • 1 large parsnip, peeled and chopped
  • half a vegetable stock cube or 1 tsp Swiss vegetable bouillon powder


  • Fry the onion in the olive oil until tender
  • Add the carrots and parsnip and enough water to cover the vegetables
  • Add the stock or vegetable bouillon and bring to the boil
  • Simmer for about 10 minutes until the vegetables are tender
  • Blend, add more water to achieve the desired consitency
